I don’t think there is anything more glorious than food. Probably a big reason I have so much trouble losing this last 10lbs. Well, actually now its more like 13lbs. Ugh…
So to celebrate my last day eating whatever I feel like shoving in my face; I have decided on some comfort food, full of things I don’t normally eat. Dairy, bread, and cream of anything! Don’t get me wrong, these are all things that are OK for you, as long as it’s in moderation and it isn’t loaded with sodium, sugar, or ingredients you can’t pronounce.
I make it a habit to keep those out of my diet and when I do, I feel great and my pants fit a little better. Unfortunately, I’ve been a HUGE slacker lately and in a bit of a funk. I normally exercise almost every morning too and just haven’t been lately.
Now I’m in a funk, and I know that exercise and a healthier diet will help immensely but I’ve been lacking motivation. Well I’m over it. Time to get this booty in gear! The holidays are just around the corner, and I know that if I’m not careful I will sadly regret my wardrobe or lack of, come the new year.
So for today, for my last meal I’m going to enjoy my comfort food. Now chicken and dumplings is something that I love, but to be honest sometimes it’s just more work than I feel like, so awhile back I found this amazing Chicken and Biscuits recipe and it’s been one to keep ever since. It’s easy, tastes delicious, and who am I kidding…my kids will complain with whatever I make! So I just make what I like, and they eat it or go to bed.
Since I’m a mom on the go, I go for easy and convenience. This means my crock pot is my favorite item in the kitchen. Seriously, is there any greater invention? I genuinely suck at remembering to defrost what we are having for dinner so about a year ago I just started throwing frozen meat in the good ole’ crock pot and presto!
So for this particular recipe I just stick 3 frozen chicken breasts with my favorite seasonings in the crock pot until the juices run clear on the bottom, mix up the rest of the ingredients and throw it in the oven as soon as I get home from work. Easy peasy, as my kids would say. Bon appetit!
